Baked Rigatoni

Baked Rigatoni satisfies lasagna cravings without all the hassle. Try this dish for a simple take on a traditional dish with all the same flavors.

Ingredients

8 ounces Anthony's® Rigatoni

1/2 pound lean ground beef

1/2 cup chopped onion

1 clove garlic, minced

1 (15-1/2 ounce) jar meatless spaghetti sauce

1/8 teaspoon pepper

1 (15 ounce) container ricotta cheese

1/2 cup milk

1/2 teaspoon salt

1 cup (8 ounces) shredded mozzarella cheese, divided

2 tablespoons grated Parmesan cheese

Directions

1Preheat oven to 350°F. Spray an 8x8-inch baking dish with non-stick cooking spray.

2Cook pasta according to package directions; drain and set aside.

3Meanwhile, cook ground beef, onion, and garlic in a large skillet over medium-high heat for 4 minutes, or until meat is lightly browned. Stir in spaghetti sauce and pepper. Reduce heat; simmer for 10 minutes or until meat is cooked through.

4In a large bowl, combine ricotta cheese, milk and salt. Add rigatoni to cheese mixture and toss to coat.

5Spoon half the rigatoni mixture into baking dish. Sprinkle 1/2 cup mozzarella on top, then add 1 cup meat sauce mixture. Repeat layers with remaining pasta, cheese, and sauce. Sprinkle with Parmesan cheese.

6Bake 20 minutes, or until internal temperature reaches 165°F.

Cook’s Tip

Serve with a green salad and warm bread for a complete meal.

This is such a great tasting recipe that is super easy to make. Even better once you make it as the recipe calls for the next time you can play with it and add eggplant or mushrooms or whatever you can think of.
