Caprese Chicken Penne combines the flavors of caprese salad with chicken for a quick and easy pasta meal. Use basil from your garden for added freshness.
16 ounces Anthony's® Penne
4 tablespoons extra virgin olive oil
1 teaspoon fresh chopped garlic
1 (14.5 ounce) can diced tomatoes, undrained
1/3 cup fresh basil leaves, chopped or cut into thin strips
10-12 ounces cooked chicken, chopped or shredded
1-1/2 cups shredded mozzarella cheese
Salt and cracked black pepper to taste
1Cook pasta according to package directions; drain well.
2Meanwhile, in a large skillet, heat four tablespoons olive oil over medium-high heat. Add garlic and cook for one minute.
3Add tomatoes and basil and cook for two minutes.
4Add chicken and simmer for five minutes, until chicken is heated through.
5Add cooked pasta and mozzarella cheese to the skillet and toss to combine; serve immediately.
