Pair sweet peppers and Italian sausage with elbows to create a savory, Italian dish perfect for a night in or a casual get-together with friends.
12 ounces Mueller’s® Elbows
14 ounces Italian sausage links, cut into 1-inch pieces
2 medium red peppers, medium diced
2 1/2 tablespoons chopped fresh basil
6-7 ounces beef consommé
2/3 cup Parmesan cheese
Salt and pepper to taste
1Cook pasta according to package directions; drain well and set aside.
2Heat a medium-sized skillet over medium-high heat and cook the sausage on both sides. Add the red peppers and cook until the peppers are soft. Drain any excess fat.
3Add the chopped basil and cook for approximately one minute, just enough to wilt the basil down.
4Add the beef consommé; bring to a boil. Reduce the heat and simmer for 5 minutes uncovered.
5Add the hot, drained pasta to the hot sausage and pepper mixture. Add the grated cheese, salt, and black pepper. Toss together and serve immediately.
Cook’s Tip: You can substitute beef broth or stock for consommé.
