Tuna and Egg Tomato Pasta Salad

A delicious pasta dish to bring to the family reunion. The added protein from the tuna and egg helps to make it a balanced meal. Make the salad ahead to allow the flavors to blend.

Ingredients

  • 16 ounces Anthony's Rotini or Anthony's Elbow Macaroni
  • 1-1/2 cups diced celery
  • 1-1/2 cups mayonnaise
  • 1 diced green bell pepper
  • 1 diced medium onion
  • 1 diced red bell pepper
  • 2 (6 ounce) cans tuna, drained and flaked
  • 2 tomatoes, seeded and diced
  • 6 hard boiled eggs, chilled and chopped fine
  • Salt and pepper to taste

Directions

    1. Cook pasta according to package directions. Rinse with cold water, drain again.
    2. Combine remaining ingredients in large bowl, toss with pasta to coat.
    3. Chill for at least 1/2 hour before serving.
