TAT's Boursin Cheese and Mushroom Pasta

A surprisingly easy and delicious pasta recipe perfect for entertaining or just for your family on a typical weeknight!

Serves: 6

Ingredients

16 ounces Anthony's Penne, Elbow Macaroni, or Shell Pasta
1 Tablespoon butter
1 Tablespoon olive oil
1 pound mushrooms, thinly sliced (or substitute mini-portabella’s for a nuttier flavor)
1/2 teaspoon salt
1-¼ cup chicken broth
5-½ ounces, Boursin cheese
1 pound asparagus, cut into 1/2 inch pieces

Directions

  1. Melt butter with oil over medium heat
  2. Add mushrooms and salt and cook, sitrring occasionally, until the mushrooms are tender and well browned (about 8-10 minutes)
  3. Add the chicken broth and Boursin cheese and bring to a simmer while stirring
  4. Cook the pasta until almost done and then add asparagus and cook until it and the pasta are finished cooking; drain
  5. Toss with the mushroom sauce and serve
