Anthony's 5 Minute Thin Spaghettini

Ingredients

1 (16-ounce) package Anthony’s® 5 Minute Thin Spaghettini
1 medium eggplant, cubed (about 4 cups)
1 large red bell pepper, cut into strips
1 large onion, cut into wedges
3 tablespoons olive oil
1 (32-ounce) jar pasta sauce

Directions

Cook spaghettini as package directs; drain. In large skillet, over medium heat, cook and stir eggplant, bell pepper and onion in oil until tender. Add pasta sauce; simmer 10 minutes. Serve with hot spaghettini.
