Pasta Primavera

Ingredients
- 1 box (13.25 oz) 100% whole grain elbow macaroni
- 1 Tbsp olive oil
- 1 medium yellow onion, diced
- 1/4 cup white wine
- 1 cup vegetable or chicken broth
- 1 bag (16 oz) frozen petite mixed vegetables
- Red pepper flakes to taste
- Salt & pepper to taste
- 1 Tbsp butter
- 1/4 cup shredded Parmesan cheese
Directions
- Cook pasta according to package instructions.
- Meanwhile, in a large skillet, sauté onions in olive oil over medium-high heat, 3 to 5 minutes. Add white wine; simmer for 5 minutes. Stir in stock and vegetables; simmer 5 to 10 minutes. Add red pepper flakes, salt & pepper to taste and cook for 5 more minutes.
- Stir in pasta, butter and Parmesan cheese. Serve immediately.
