Ingredients

  • 1 box (13.25 oz) 100% whole grain elbow macaroni
  • 1 Tbsp olive oil
  • 1 medium yellow onion, diced
  • 1/4 cup white wine
  • 1 cup vegetable or chicken broth
  • 1 bag (16 oz) frozen petite mixed vegetables
  • Red pepper flakes to taste
  • Salt & pepper to taste
  • 1 Tbsp butter
  • 1/4 cup shredded Parmesan cheese

Directions

  1. Cook pasta according to package instructions.
  2. Meanwhile, in a large skillet, sauté onions in olive oil over medium-high heat, 3 to 5 minutes. Add white wine; simmer for 5 minutes. Stir in stock and vegetables; simmer 5 to 10 minutes. Add red pepper flakes, salt & pepper to taste and cook for 5 more minutes.
  3. Stir in pasta, butter and Parmesan cheese. Serve immediately.
