Orzo with Ham and Mushrooms

Ingredients

  • 12 oz Orzo (Rosamarina) pasta
  • 1/4 cup Olive oil
  • 2 Tbsp garlic, chopped
  • 1lb. Ham, sliced julienne
  • 1/2 lb Mushrooms sliced
  • 1/4 cup Fresh Basil, chopped
  • 1/4 cup Roasted Red Pepper, diced
  • 1/2 cup White wine
  • 1/2 cup Chicken Broth or Chicken Consommé
  • 3/4 cup parmesan cheese, imported
  • Salt and black pepper to taste

Directions

  1. Heat the oil in the sauté pan; add the garlic, ham, mushrooms and fresh basil. Sauté for two minutes.
  2. Add the cooked Orzo pasta and the red pepper, toss to blend.
  3. Add the wine and chicken broth; cook until it starts to simmer, then toss in the cheese and season with salt and black pepper.
