Ingredients
- 12 oz. Wide Egg Noodles
- 4 eggs
- 1 cup sour cream
- 1 cup cottage cheese
- 1/3 cup melted butter
- 1/4 cup milk
- Salt and pepper, to taste
Directions
- Preheat oven to 350°F. Spray an 11 x 17-inch baking dish with nonstick spray. Cook pasta according to package directions; drain. Set aside to cool slightly.
- In a large bowl, whisk together eggs, sour cream, cottage cheese, butter, milk, and salt and pepper. Stir in noodles.
- Spoon into prepared baking dish.
- Bake, uncovered for 45-60 minutes or until a knife inserted in the center comes out clean.
- For a sweeter noodle pudding, stir in 1/4 to 1/2 cub sugar into sour cream mixture. Proceed as recipe directs.
- For a crunchy topping, combine 1/3 cup cornflake crumbs with 1 tablespoon melted butter. Sprinkle crumbs over pudding before baking.
