Anthony's 100% Whole Grain Penne

Ingredients

16 ounces Anthony's 100% Whole Grain Penne or Elbow Macaroni
2 cups diced ham
4 ounces shredded swiss cheese
1 cup milk
1 cup half and half
1 cup sour cream
3 green onions, chopped
1 whole roasted red peper, diced
2 garlic cloves, finely minced
2 tablespoons butter
2 tablespoons flour
1 teaspoon salt
1/2 teaspoon ground black pepper

Directions

  1. Cook pasta until halfway done (just starts to become tender) and drain; set aside
  2. Melt butter over medium heat and add green onion, garlic, and red pepper; cook for 2 minutes
  3. Add flour, stir well and cook for an additional 2-3 minutes
  4. Add milk, half and half, and half of the swiss cheese
  5. Cook, stirring constantly over medium-high heat, until sauce becomes thick and bubbly
  6. Remove from heat and stir in sour cream until combined
  7. Pour into a casserole dish
  8. Spread remaining cheese on top and bake in the oven at 350 degrees for 25-30 minutes
