Mostaccioli with Zucchini & Smoked Sausage

Ingredients
- 12 oz Anthony's Mostaccioli
- 2 Tbsp vegetable oil
- 2 medium zucchini, not peeled, sliced in half lengthwise, then sliced 1/2-inch thick
- 1 lb smoked beef sausage, sliced crosswise 1/2-inch thick
- 1 can (14.5 oz) diced tomatoes with basil, garlic and oregano, undrained
- 1 tsp Italian seasonings
- Salt and pepper to taste
Directions
- Cook pasta according to package directions; drain.
- Heat oil in a Dutch oven or large saucepan over medium-high heat. Add zucchini and sausage cook 5 to 6 minutes stirring frequently or until zucchini is tender.
- Add tomatoes and seasonings. Cook 5 to 6 minutes or until hot and bubbly. Stir pasta into sauce.
- If desired, substitute any flavor of smoked sausage or brat for smoked beef sausage. Substitute 1 package (16 oz) frozen broccoli or vegetable blend for zucchini. Add 1 can (4 oz) sliced mushrooms, drained, along with the sausage.
