Italian Wedding Soup

Ingredients
½ pound ground turkey½ cup fresh bread crumbs (1 slice bread, crumbled)
1 egg, slightly beaten
1 tablespoon finely chopped onion
4 teaspoons chicken-flavor instant bouillon & seasoning
6 cups water
½ cup Anthony’s® Stars, uncooked
1½ cups chopped fresh spinach leaves
Grated Parmesan cheese, optional
Directions
In small bowl, combine turkey, crumbs, egg, onion and 1 teaspoon bouillon. Shape into 1/2-inch meatballs. Place meatballs in a shallow baking dish sprayed with cooking spray. Bake 15 minutes at 425˚. Meanwhile, in large pot, bring water and remaining bouillon to a boil. Add meatballs and stars; cook 10 minutes. Add spinach; simmer 3 to 5 minutes or until tender. Serve with cheese if desired.
