Italian Pasta Stir-Fry

Ingredients

8 ounces Anthony's® Penne Rigate
2 tablespoons olive oil
1 medium zucchini, sliced
½ cup chopped onion
2 cloves garlic, finely chopped
2 cups chopped tomato
¼ cup chopped fresh basil
½ teaspoon salt
¼ cup grated Parmesan cheese  

Directions

Cook penne rigate as package directs; drain. In a large skillet, heat oil. Add zucchini, onion and garlic; cook and stir 3 minutes or until tender-crisp. Add tomatoes; cook and stir 2 minutes or until thoroughly heated. Stir in hot penne rigate, basil and salt. Sprinkle with cheese; serve immediately.
