Fresh Tomato Basil Pasta Sauce with Linguine

Easy to serve, fresh tomatoes and basil make this a classic pasta sauce for summertime. The sweet fragrance that results while cooking makes the house smell great, too!

Serves 4

Ingredients
  • 8 ounces Anthony's Linguine
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1-1/2 pounds plum tomatoes, coarsely chopped
  • 2 cups loosely packed fresh basil, chopped
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon salt
  • 1/8 teaspoon crushed red pepper (optional)
  • 1/4 cup grated Parmesan cheese
  • Freshly ground black pepper to taste
Directions
    1. Cook pasta according to package directions.
    2. Heat oil in large skillet over medium-high heat. Add garlic; stirring constantly, cook 1 minute. Stir in tomatoes and bring to a boil. Reduce heat; cover and simmer 5 minutes, stirring occasionally or until sauce thickens slightly. Stir in basil, vinegar, salt and crushed red pepper. Spoon over linguine.
    3. Sprinkle with cheese and pepper.
