Fresh Pasta Primavera

Primavera, or "springtime" in Italian, always showcases delicious in-season vegetables. This sauce is full of vegetables.

Ingredients

  • 16 ounces Anthony's Mostaccioli
  • 1 head broccoli or cauliflower, cut into small florets
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • 3 cloves garlic, minced
  • 1 (15-1/2 ounce) can low-sodium chicken broth
  • 1 cup sugar snap peas, ends trimmed*
  • 1 cup sliced carrots
  • 10 ounces fresh or frozen chopped spinach, thawed
  • Salt and pepper to taste
  • 1 cup grated Parmesan cheese
  • *1-10 ounce package frozen mixed vegetables, thawed, may be substituted for fresh sugar snap peas and carrots

Directions

    1. Cook pasta according to package directions.
    2. Three minutes before the pasta is done, stir in the broccoli or cauliflower. Drain pasta and vegetables and transfer to a large bowl. Dissolve the cornstarch in 1/4 cup of water in a small bowl.
    3. Put the garlic in a large saucepan with chicken broth. Simmer over medium heat for 3 minutes. Whisk in cornstarch. Add sugar snap peas, carrots and spinach; cook until hot, about 5 minutes.
    4. Toss the sauce and vegetables with the pasta, season with salt and pepper.
    5. Sprinkle with Parmesan cheese and serve.
