Fresh Pasta Primavera
Primavera, or "springtime" in Italian, always showcases delicious in-season vegetables. This sauce is full of vegetables.

Ingredients
- 16 ounces Anthony's Mostaccioli
- 1 head broccoli or cauliflower, cut into small florets
- 1 tablespoon cornstarch
- 1/4 cup water
- 3 cloves garlic, minced
- 1 (15-1/2 ounce) can low-sodium chicken broth
- 1 cup sugar snap peas, ends trimmed*
- 1 cup sliced carrots
- 10 ounces fresh or frozen chopped spinach, thawed
- Salt and pepper to taste
- 1 cup grated Parmesan cheese
- *1-10 ounce package frozen mixed vegetables, thawed, may be substituted for fresh sugar snap peas and carrots
Directions
- Cook pasta according to package directions.
- Three minutes before the pasta is done, stir in the broccoli or cauliflower. Drain pasta and vegetables and transfer to a large bowl. Dissolve the cornstarch in 1/4 cup of water in a small bowl.
- Put the garlic in a large saucepan with chicken broth. Simmer over medium heat for 3 minutes. Whisk in cornstarch. Add sugar snap peas, carrots and spinach; cook until hot, about 5 minutes.
- Toss the sauce and vegetables with the pasta, season with salt and pepper.
- Sprinkle with Parmesan cheese and serve.
