Brunch Frittata

Anthony's Thin Spaghettini

Ingredients

8 ounces (1/2 package) Anthony’s® Thin Spaghettini
4 eggs, slightly beaten
½ cup grated Parmesan cheese
¼ cup milk
½ teaspoon salt
1/8 teaspoon pepper
¾ cup shredded Provolone cheese
½ cup each chopped green bell pepper, chopped tomato and sliced ripe olives
1 (26-ounce jar) pasta sauce

Directions

Cook spaghettini as package directs; drain. Preheat oven to 350 F. Coat 9-inch pie plate with vegetable cooking spray. In medium bowl, combine eggs, Parmesan, milk, salt and pepper; mix well. Stir in spaghettini; evenly distribute in pie plate. Sprinkle with Provolone, green pepper, tomatoes and olives. Cover with aluminum foil. Bake 20 minutes. Uncover; bake 15 minutes longer. Heat pasta sauce. Serve frittata warm, topped with pasta sauce.
