Bow Ties & Spinach Salad

Ingredients
8 ounces (1/2 package) Anthony’s® Bow Ties3 cups torn fresh spinach
1½ cups grape or cherry tomatoes, halved
1/3 cup sliced green onions
1/3 cup olive oil
3 tablespoons lemon juice
2 teaspoons Dijon-style mustard
2 cloves garlic, finely chopped
Salt & pepper to taste
toasted pine nuts, optional
Directions
Cook bow ties as package directs; drain. In large bowl, combine bow ties, spinach, tomatoes and green onions. In small bowl, combine all remaining ingredients except pine nuts; mix well. Pour dressing over pasta mixture; toss well. Top with pine nuts if desired. Serve immediately.
