Boursin Cheese and Mushroom Sauce Pasta

A delicious pasta dish with Boursin cheese and mushroom sauce, perfect for dinner!

Serves: 8

Ingredients

16 ounces Ronco Shell Pasta or 100% Whole Grain Elbow Macaroni
1 tablespon olive oil
1 pound mushrooms or mini portabellas, thinly sliced
1/2 teaspoon salt
1 and 1/4 cup chicken broth
5 and 1/2 ounces Boursin cheese
1 pound asparagus, cut into 1/2 inch pieces

Directions

  1. Melt butter with olive oil over medium heat
  2. Add mushrooms and salt and cook, stirring occasionally, until mushrooms are tender and well browned
  3. Add chicken broth and Boursin cheese and bring to a simmer while stirring
  4. Cook the pasta according to package directions until almost done
  5. Add asparagus to pasta and cook until both are done; drain
  6. Toss pasta and asparagus with mushroom and serve
