California Pesto Primavera
Fresh ingredients mixed with linguine. Ready to eat in minutes, this dish bursts with sundried tomato flavor.

Ingredients
- 12 ounces Anthony's Linguine
- 1/4 cup olive oil
- 3/4 cup thinly sliced mushrooms
- 1/4 cup minced scallions
- 3/4 cup sun dried tomato strips
- 1 tablespoon fresh lemon juice
- 2 tablespoons butter
- 1 cup chopped fresh spinach leaves
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
Directions
- Cook pasta according to package directions. Reserve 1 cup pasta cooking water.
- Heat olive oil in large skillet over medium heat; cook and stir mushrooms and scallions, 4 minutes. Add sun dried tomatoes, pasta cooking water and lemon juice; simmer for 2 minutes.
- Add cooked pasta, spinach and butter to skillet.
- Season with salt and pepper to taste. Sprinkle with Parmesan cheese.
